CAULIFLOWER BITES WITH GREEN GODDESS DIP

These crispy, roasted cauliflower bites are the perfect party snack. The Vitamin K found in cauliflower, which helps prevent bone loss, is a fat-soluble vitamin making it a great match to this avocado based green goddess dip which is full of healthy fats.

Ingredients

For the CAULIFLOWER:

2 heads cauliflower, cut into medium sized florets
3 tablespoons avocado oil
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon sea salt
½ teaspoon pepper 

For the GREEN GODDESS DIP:

1 large avocado, skin and pit removed
1 cup basil, stems removed
1 cup parsley, stems removed
1 cup cilantro, stems removed
1 lemon, juiced
¼ cup water
½ teaspoon sea salt 

Instructions

  • Preheat your oven to 425F and line a baking tray with parchment paper.
  • In a medium bowl, combine the cauliflower, avocado oil, chili powder, garlic powder, paprika, salt and pepper. Toss well to combine.
  • Place the cauliflower on the prepared tray and spread into a single layer. Place in the oven and bake for 25 minutes, flipping once.
  • While the cauliflower roasts, prepare the green goddess dip by placing all of the ingredients in a blender and blending on high until smooth, about 2 minutes. Pour into a small bowl.
  • Remove the cauliflower from the oven and arrange on a platter with the bowl of dip. Serve immediately.
  • Store leftovers in an airtight container in the fridge for up to 2 days. Store dip with the avocado pit in it to prevent browning.
