Snow peas are a wonderful vegetable that appears in the spring and early summer depending on your location. Since their outer pods do not contain inedible fiber as other pea pods do, the entire snow pea is edible and provide excellent nutrients such as Vitamin A, Vitamin C and potassium.

1 red bell pepper, seeded and sliced into strips

2 ½ cups snow peas
1 cup raw cashews
2 tablespoons water
3 tablespoons low-sodium tamari
1 teaspoon sesame oil
1 teaspoon maple syrup
