CASHEW & SNOW PEA STIR FRY

Snow peas are a wonderful vegetable that appears in the spring and early summer depending on your location. Since their outer pods do not contain inedible fiber as other pea pods do, the entire snow pea is edible and provide excellent nutrients such as Vitamin A, Vitamin C and potassium.

SERVES 6
20 MINUTES
VEGAN
GLUTEN-FREE

Ingredients

1 clove garlic, minced
1 inch ginger, minced
½ cup yellow onion, diced
1 red bell pepper, seeded and sliced into strips
1 tablespoon avocado oil
2 ½ cups snow peas
1 cup raw cashews
2 tablespoons water
3 tablespoons low-sodium tamari
1 teaspoon sesame oil
1 teaspoon maple syrup 

Instructions

  • Heat the oil in a large pan over medium heat. Add the onion and cook 5 minutes or until onions are soft.
  • Add the garlic and ginger and cook another 1 minute, being careful not to burn the garlic. Place the red bell pepper in the pan and cook another 5 minutes.
  • After 5 minutes, add the snap peas and a splash of water. Place the lid on and cook for 3 minutes or until vegetables are tender but still crisp.
  • In a small bowl, whisk together the tamari, sesame oil and maple syrup. Pour into the pan and let cook for 2 minutes, stirring frequently.
  • Serve hot over quinoa, brown rice or other whole grain, if desired.
  • Leftovers can be stored in an airtight container for up to 5 days.
